Emilien works with Pinot Noir and Chardonnay and focuses on creating Champagne that fully expresses the terroir and the vintage. Vinification is done in oak and sandstone amphorae, with minimal intervention both in the vineyard and in the cellar. These unique and wonderfully expressive wines are certainly a benchmark among new young winemakers.
